Looking for some other crops to grow in Ohio.

Trying to diversify a little bit. There’s plenty of corn soybeans and wheat grown in northwestern Ohio. I wanna find something different that can help soil fertility. I wanna find a crop like wheat that is harvest at more management time instead of trying to get rushed through fall every year. It seems easier in my opinion to take advantage of having nice equipment and using it more year round instead of buying more just get corn off at a reasonable time. I’ve used oats as a cover crop to be baled. Looking for something new. Thanks!
