From gate to plate is a good way to put it, but might go further all the way back to genetics. Right now we're looking across the board at ways to reduce operating costs, especially on major inputs, and improve marketing, just like we do with grain. We've started as we always do, talking with dozens of our members spanning multiple species -- beef cattle, dairy, swin...

What about a Branded meat product based on livestock bred using genetics with known, high level eating quality traits - intra muscular fat, tenderness, juiciness, low sheer force etc. Consistent high standard, replicatable with known genetics and quality pasture and a branded item for niche market margins

We need segmentation in the cattle market based on quality. The premium for Choice and Prime beef is very small at the sale barn, but very high on the retail end. Farmers that are proactive in producing high quality beef capture very little of the value they produce for their efforts. We need a way to match end users, high end restaurants, with high quality beef producers.
